The shape is designed so that food can be cooked with minimal water. The water condenses and goes back into the food. The tagine (the container) retains the aromas and gives flavour to subsequent dishes.

Traditionally in Moroccan culture, when a woman is married, she would take a tagine to the new house. Tagines are often passed down generations in families. This one is quite typical, being made of red clay.

I live in Oxford now and often cook tagine for my family and guests. I don't always cook it in this dish, sometimes I just cook it in a pot on the gas hob, and then transfer it into this nice dish before serving."
